- 2 large egg yolks
- 1/3 cup caster sugar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- 1 1/2 tbsp cornflour/cornstarch
- 1 cup full-fat milk
- 1 1/2 cups thickened cream/heavy cream
- 150 g 70% cocoa chocolate (bittersweet)
- Pinch salt
- 3/4 cup thickened cream/heavy cream
- 1/2 tsp vanilla extract
- 2 tsp white sugar
Instructions
- In a medium saucepan, whisk together the egg yolks and caster sugar until well combined. Then, add the vanilla extract, cocoa powder, cornflour, and a splash of milk to dissolve. Mix in the remaining milk, thickened cream, and a pinch of salt for extra flavor.
- Place the saucepan over medium heat and cook, whisking occasionally. Look for bubbles breaking the surface, which should take about 5 minutes. Stir for an additional 15 seconds before removing from heat.
- Stir in the chopped bittersweet chocolate until it’s fully melted and seamlessly incorporated into the mixture.
- Immediately pour the rich chocolate mixture into individual glasses or ramekins. Allow them to cool for about 15 minutes at room temperature, then refrigerate uncovered for at least 3 hours or until they’re set perfectly.
- In a separate bowl, whip the thickened cream with the sugar and vanilla extract until it reaches a lovely soft peak.
- Once the pudding is set, generously top each one with the whipped cream and if you like, a sprinkle of chopped chocolate or your favorite toppings.
