Description

Ingredients

  • 2 large egg yolks
  • 1/3 cup caster sugar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1 1/2 tbsp cornflour/cornstarch
  • 1 cup full-fat milk
  • 1 1/2 cups thickened cream/heavy cream
  • 150 g 70% cocoa chocolate (bittersweet)
  • Pinch salt
  • 3/4 cup thickened cream/heavy cream
  • 1/2 tsp vanilla extract
  • 2 tsp white sugar

Instructions

  1. In a medium saucepan, whisk together the egg yolks and caster sugar until well combined. Then, add the vanilla extract, cocoa powder, cornflour, and a splash of milk to dissolve. Mix in the remaining milk, thickened cream, and a pinch of salt for extra flavor.
  2. Place the saucepan over medium heat and cook, whisking occasionally. Look for bubbles breaking the surface, which should take about 5 minutes. Stir for an additional 15 seconds before removing from heat.
  3. Stir in the chopped bittersweet chocolate until it’s fully melted and seamlessly incorporated into the mixture.
  4. Immediately pour the rich chocolate mixture into individual glasses or ramekins. Allow them to cool for about 15 minutes at room temperature, then refrigerate uncovered for at least 3 hours or until they’re set perfectly.
  5. In a separate bowl, whip the thickened cream with the sugar and vanilla extract until it reaches a lovely soft peak.
  6. Once the pudding is set, generously top each one with the whipped cream and if you like, a sprinkle of chopped chocolate or your favorite toppings.
