Ingredients

  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)
  • 2 cups egg noodles
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for about 5 minutes or until the vegetables are tender.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken broth to the pot and bring it to a boil.
  5. Stir in the shredded chicken, dried thyme, dried parsley, salt, and black pepper. Let it simmer for 10 minutes.
  6. Add the egg noodles to the pot and cook according to the package instructions, usually around 6-8 minutes until tender.
