- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded (rotisserie chicken works well)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon black pepper (to taste)
- 2 cups egg noodles
- 1 cup frozen peas (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for about 5 minutes or until the vegetables are tender.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chicken broth to the pot and bring it to a boil.
- Stir in the shredded chicken, dried thyme, dried parsley, salt, and black pepper. Let it simmer for 10 minutes.
- Add the egg noodles to the pot and cook according to the package instructions, usually around 6-8 minutes until tender.
