Savory Dumpling Bake with coconut milk and red curry, perfect for any weeknight dinner.

- 1 can Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 1 tbsp Honey
- 1 tbsp Sesame oil
- 2 cloves Garlic
- 1 tbsp Ginger
- 1 lb Dumplings of choice
- 1 bunch Bok choy
- 1 medium Zucchini
- 2 tbsp Sesame seeds
- 2 stalks Sliced green onions
- 2 tbsp Cilantro
- 1 tbsp Chili crisp oil
- 2 cups White jasmine rice
Instructions
- In a large baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth. Grate in garlic and ginger.
- If desired, add ¼ cup of water for a brothy consistency.
- Preheat oven to 400℉ / 200℃. Chop bok choy and slice zucchini, adding to the baking dish.
- Arrange frozen dumplings in the dish without overlapping, covering them with broth. Cover with aluminum foil.
- Bake for 20 minutes, then remove foil and bake for another 5-10 minutes until bubbly.
- Sprinkle with garnishes and serve over jasmine rice or noodles.
Notes
- Adjust red curry paste for desired spice level.
- Substitutions can be made for bok choy and zucchini.
- Serve immediately for best texture.
