Savory Dumpling Bake with coconut milk and red curry, perfect for any weeknight dinner.


Ingredients

  • 1 can Coconut milk
  • 2 tbsp Red curry paste
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Honey
  • 1 tbsp Sesame oil
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1 lb Dumplings of choice
  • 1 bunch Bok choy
  • 1 medium Zucchini
  • 2 tbsp Sesame seeds
  • 2 stalks Sliced green onions
  • 2 tbsp Cilantro
  • 1 tbsp Chili crisp oil
  • 2 cups White jasmine rice

Instructions

  1. In a large baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth. Grate in garlic and ginger.
  2. If desired, add ¼ cup of water for a brothy consistency.
  3. Preheat oven to 400℉ / 200℃. Chop bok choy and slice zucchini, adding to the baking dish.
  4. Arrange frozen dumplings in the dish without overlapping, covering them with broth. Cover with aluminum foil.
  5. Bake for 20 minutes, then remove foil and bake for another 5-10 minutes until bubbly.
  6. Sprinkle with garnishes and serve over jasmine rice or noodles.

Notes

  • Adjust red curry paste for desired spice level.
  • Substitutions can be made for bok choy and zucchini.
  • Serve immediately for best texture.
