- 2 cups crushed chocolate sandwich cookies
- 5 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup dulce de leche
- Vanilla extract (optional)
- Pinch of salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) while you prepare the crust.
- In a medium bowl, combine 2 cups crushed chocolate sandwich cookies with 5 tablespoons melted butter until well-combined. Press the mixture firmly into the bottom of the prepared baking pan to form a solid crust.
- In a large mixing bowl, beat 16 oz softened cream cheese and 1/2 cup granulated sugar until smooth and creamy.
- Add 2 large eggs one at a time, mixing well after each addition until fully incorporated.
- Stir in 1 cup dulce de leche until fully combined.
- Pour the cheesecake mixture over the crust in the pan and smooth the top.
- Bake for 30-35 minutes, or until the center is just set.
- Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before cutting into bars.
- Serve chilled.
Notes
For best results, use high-quality dulce de leche and allow the bars to cool completely in the fridge for better flavor and texture.
