Ingredients

  • ½ cup chocolate chips (Semi-Sweet or Milk)
  • ⅔ teaspoon coconut oil
  • 1 cup pistachio cream
  • 1 cup corn flakes
  • ¼ cup chopped pistachios

Instructions

  1. Start by arranging six silicone muffin cups in a muffin tin.
  2. In a microwave-safe bowl, melt the chocolate chips with the coconut oil. Heat in short bursts of 20 seconds, stirring in between.
  3. Divide the melted chocolate among the prepared cups, spreading it evenly up the sides and along the bottom. Freeze for about 10 minutes or until set.
  4. Crush the corn flakes and mix with the pistachio cream until a thick mixture forms.
  5. Remove the muffin tin from the freezer and spoon the corn flake and pistachio mixture into each chocolate-coated cup, pressing down gently.
  6. Melt the remaining chocolate and coconut oil together, then pour this mixture over the filled cups.
  7. Sprinkle chopped pistachios on top of each filled cup and chill in the fridge for at least 30 minutes.
