- ½ cup chocolate chips (Semi-Sweet or Milk)
- ⅔ teaspoon coconut oil
- 1 cup pistachio cream
- 1 cup corn flakes
- ¼ cup chopped pistachios
Instructions
- Start by arranging six silicone muffin cups in a muffin tin.
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil. Heat in short bursts of 20 seconds, stirring in between.
- Divide the melted chocolate among the prepared cups, spreading it evenly up the sides and along the bottom. Freeze for about 10 minutes or until set.
- Crush the corn flakes and mix with the pistachio cream until a thick mixture forms.
- Remove the muffin tin from the freezer and spoon the corn flake and pistachio mixture into each chocolate-coated cup, pressing down gently.
- Melt the remaining chocolate and coconut oil together, then pour this mixture over the filled cups.
- Sprinkle chopped pistachios on top of each filled cup and chill in the fridge for at least 30 minutes.
