- 3 tbsp unsalted butter
- ¼ cup heavy cream
- ¼ cup limoncello
- 1 tsp lemon zest
- ½ tsp vanilla extract
- Pinch of salt

- 2 oz (56g) white chocolate, melted
- Optional: candied lemon zest or powdered sugar for garnish
Instructions
- In a heatproof bowl, combine the finely chopped white chocolate and butter. Heat the heavy cream over medium heat until just simmering, then pour it over the chocolate mixture and let it sit for 2 minutes to soften.
- Stir gently until the chocolate and butter are completely melted and smooth. Add limoncello, lemon zest, vanilla extract, and a pinch of salt. Mix thoroughly until well incorporated.
- Cover the bowl with plastic wrap and refrigerate for about 2 hours or until the mixture is firm enough to scoop.
- Use a small cookie scoop or teaspoon to portion out the mixture and roll into smooth balls. Place them on a parchment-lined tray and freeze for 30 minutes to firm up.
- Melt the 12 oz of white chocolate using a double boiler or microwave. Using a fork or dipping tool, coat each truffle in the melted chocolate, allowing excess to drip off, then place them back on the parchment-lined tray. Let the coating set completely.
- Melt the remaining 2 oz of white chocolate and drizzle it in thin lines over the truffles. Garnish with candied lemon zest or a light dusting of powdered sugar if desired.
- Allow truffles to sit at room temperature until the drizzle firms, or refrigerate for 10-15 minutes to speed up setting.
