- 2 eggs
- 1 cup mixed vegetables (fresh or frozen)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Heat the sesame oil in a pan over medium heat.
- Add the mixed vegetables and sauté for about 3 minutes until tender.
- Push the vegetables to one side of the pan, then add the eggs to the other side. Scramble the eggs until fully cooked.
- Combine the rice and soy sauce, mixing everything evenly.
- Season with salt and pepper, and cook for another 2-3 minutes.
