- 1 box of yellow cake mix
- 1 cup of chopped pecans
- 1 cup of unsalted butter, melted
- 1 can (15 oz) of pure pumpkin puree
- 1 cup of brown sugar
- 1 cup of corn syrup
- 4 large eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, brown sugar, corn syrup, eggs, vanilla extract, cinnamon, and salt. Mix until well combined.
- Grease a 9×13 inch baking dish and pour the pumpkin mixture into the bottom, spreading it evenly.
- Sprinkle the dry yellow cake mix over the pumpkin mixture without mixing.
- Evenly spread the chopped pecans on top, then pour the melted butter over everything.
- Bake for 45-50 minutes, or until the edges are golden brown.
- Allow to cool for a few minutes before cutting into squares. Serve warm, optionally with whipped cream.
Notes
For additional crunch, add extra pecans. If you prefer, you can switch the pumpkin for apple filling or chocolate pudding.
