- 1 pound ground beef
- 1 cup cauliflower rice
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 1 cup shredded cheese
- Optional: olives or jalapeños
- Optional: sour cream or avocado for topping
Instructions
- Preheat your oven to 350°F (175°C) and prepare cauliflower rice.
- In a skillet, brown the ground beef over medium heat for about 10 minutes.
- Add onions and bell peppers to the skillet, sauté for 5 minutes.
- Stir in taco seasoning, diced tomatoes, and cauliflower rice, cooking for an additional 5 minutes.
- In a baking dish, layer half of the meat mixture, followed by half of the cheese. Repeat layers.
- Bake uncovered for 25-30 minutes until bubbly and golden on top.
Notes
Pre-cook cauliflower rice to avoid excess moisture. This recipe is easily customizable to fit your preferences.
