Ingredients

  • 1 pound ground beef
  • 1 cup cauliflower rice
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup shredded cheese
  • Optional: olives or jalapeños
  • Optional: sour cream or avocado for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare cauliflower rice.
  2. In a skillet, brown the ground beef over medium heat for about 10 minutes.
  3. Add onions and bell peppers to the skillet, sauté for 5 minutes.
  4. Stir in taco seasoning, diced tomatoes, and cauliflower rice, cooking for an additional 5 minutes.
  5. In a baking dish, layer half of the meat mixture, followed by half of the cheese. Repeat layers.
  6. Bake uncovered for 25-30 minutes until bubbly and golden on top.
