Description

Ingredients

  • 1 cup pure pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 cup heavy cream
  • 1 to 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon extra cinnamon
  • 1/4 teaspoon salt
  • 1 pre-baked pie crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blind bake the pie crust until set and lightly golden.
  3. Warm the pumpkin puree, brown sugar, granulated sugar, and spices in a saucepan over low heat for 2-3 minutes.
  4. Remove from heat and whisk in the eggs, heavy cream, bourbon, and vanilla extract until combined.
  5. Pour the filling into the prepared crust and bake until the edges are set and the center jiggles slightly.
  6. Let the pie cool to room temperature, then chill in the refrigerator until fully set.
  7. Before serving, sprinkle an even layer of granulated sugar over the cold pie.
  8. Using a torch or broiler, brûlée the sugar topping until golden brown and crunchy.
