- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Whisk together the dry ingredients in a medium bowl.
- Beat butter and sugars until fluffy. Add eggs and vanilla.
- Gradually add dry ingredients until just combined. Fold in carrots, pineapple, and walnuts.
- Pour into the pan and bake for 30-35 minutes. Cool completely.
- For frosting, beat cream cheese and butter, slowly add powdered sugar, and spread over cooled bars.
Notes
For a vegan version, replace butter with coconut oil and use a dairy-free cream cheese.
