Ingredients

  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Whisk together the dry ingredients in a medium bowl.
  3. Beat butter and sugars until fluffy. Add eggs and vanilla.
  4. Gradually add dry ingredients until just combined. Fold in carrots, pineapple, and walnuts.
  5. Pour into the pan and bake for 30-35 minutes. Cool completely.
  6. For frosting, beat cream cheese and butter, slowly add powdered sugar, and spread over cooled bars.

Notes

For a vegan version, replace butter with coconut oil and use a dairy-free cream cheese.
