Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 6 large egg yolks
  • 1/2 cup dark cocoa powder
  • 4 oz dark chocolate, finely chopped
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup candy corn, chopped into small pieces

Instructions

  1. Heat milk, cream, and half the sugar in a saucepan until steaming. Stir frequently to prevent scorching.
  2. In a separate bowl, whisk egg yolks with the remaining sugar until pale.
  3. Slowly temper the egg yolk mixture with the hot milk mixture. Return everything to the saucepan.
  4. Cook on low heat, stirring constantly, until the mixture coats the back of a spoon.
  5. Remove from heat and whisk in the dark cocoa powder, chopped dark chocolate, vanilla extract, and salt until smooth.
  6. Strain the mixture into a bowl, cover, and refrigerate for at least 4 hours, or preferably overnight.
  7. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  8. During the final few minutes of churning, gently fold in the chopped candy corn pieces.
