Instructions
- Wash and slice the cucumbers into rounds or half-moons.

- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the cucumber mixture and gently toss to combine.
- Chill in the fridge for 15-30 minutes before serving to let the flavors meld.
