Delicious Cucumber Boats Stuffed with Creamy Bacon Goodness
Ingredients

- 8 oz Cream cheese (softened)
- 4 slices Cooked bacon (crumbled; may substitute turkey bacon)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 pinch Salt
- 1 pinch Pepper
- 4 mini Cucumbers (sliced in half lengthwise)
- 2 tbsp Chives (minced)
Instructions
- Cook the bacon in a skillet over medium heat until crisp. Let it cool, then crumble it into small pieces.
- Wash and dry the mini cucumbers, then slice them in half lengthwise.
- Scoop out the seeds from each cucumber half and pat the insides dry with a paper towel.
- In a mixing bowl, combine the softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
- Scoop the creamy mixture into each cucumber half generously.
- Garnish with crumbled bacon and minced chives before serving.
