Description
Crumbed salmon with sweet potato chips delivers a delightful crunch and is a healthy dinner option packed with omega-3s.

- 1 kg Sweet potatoes (kumara) (peeled and cut into chips)
- 1 tablespoon Olive oil (for drizzling)
- Sea salt and cracked black pepper (to taste)
- 2 cups Fresh breadcrumbs (use whole-grain or panko)
- 1/2 cup Flat-leaf parsley leaves (chopped)
- 40 g Unsalted butter (melted)
- 4 x 200g Salmon fillets (skin removed)
- Whole-egg mayonnaise (for serving)
Instructions
- Preheat your oven to 200°C (400°F).
- Spread the sweet potato chips on a baking tray. Drizzle with olive oil and sprinkle sea salt and cracked black pepper. Roast for 30–35 minutes until golden brown.
- Combine breadcrumbs, chopped parsley, melted butter, salt, and pepper in a mixing bowl. Stir until well incorporated.
- Line a baking tray with non-stick paper. Place the salmon fillets on it and generously top each with the breadcrumb mixture. Bake for 12–15 minutes.
- Plate the salmon alongside your crispy sweet potato chips and serve with a dollop of whole-egg mayonnaise.
