Description

Crumbed salmon with sweet potato chips delivers a delightful crunch and is a healthy dinner option packed with omega-3s.


Ingredients

Scale
  • 1 kg Sweet potatoes (kumara) (peeled and cut into chips)
  • 1 tablespoon Olive oil (for drizzling)
  • Sea salt and cracked black pepper (to taste)
  • 2 cups Fresh breadcrumbs (use whole-grain or panko)
  • 1/2 cup Flat-leaf parsley leaves (chopped)
  • 40 g Unsalted butter (melted)
  • 4 x 200g Salmon fillets (skin removed)
  • Whole-egg mayonnaise (for serving)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Spread the sweet potato chips on a baking tray. Drizzle with olive oil and sprinkle sea salt and cracked black pepper. Roast for 30–35 minutes until golden brown.
  3. Combine breadcrumbs, chopped parsley, melted butter, salt, and pepper in a mixing bowl. Stir until well incorporated.
  4. Line a baking tray with non-stick paper. Place the salmon fillets on it and generously top each with the breadcrumb mixture. Bake for 12–15 minutes.
  5. Plate the salmon alongside your crispy sweet potato chips and serve with a dollop of whole-egg mayonnaise.
