  • 4 large, flaky croissants
  • 4 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 slices thick-cut smoked beef bacon, or 4 slices beef ham/beef breakfast sausage
  • 4 slices provolone or sharp cheddar cheese
  • 1 large ripe tomato, thinly sliced
  • 2 cups fresh arugula or spinach
  • 2 tablespoons unsalted butter
  • Pinch of garlic powder (optional)
  • 1/4 cup mayonnaise
  • 12 tablespoons Sriracha sauce
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon smoked paprika

Instructions

  1. Lay beef bacon in a cold skillet over medium heat. Cook for 8-12 minutes, flipping occasionally, until crisp. Drain on paper towels and set aside. (If using beef ham/sausage, cook per package directions).
  2. In a bowl, whisk 4 large eggs, 1/4 cup milk, 1/4 tsp salt, and 1/4 tsp black pepper. Melt 2 tbsp unsalted butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until eggs are scrambled and fully cooked. Divide into 4 portions.
  3. Thinly slice tomato. Wash and dry arugula/spinach. In a small bowl, whisk together mayonnaise, Sriracha, lemon juice, and smoked paprika for the sauce. Taste and adjust.
  4. Preheat oven to 350°F (175°C) or use a toaster oven. Slice each croissant horizontally. Lightly toast cut sides for 1-2 minutes if desired.
  5. Spread Sriracha mayo on the bottom half of each croissant. Layer with scrambled eggs, cheese (allowing it to melt from residual heat), beef bacon, tomato slices, and arugula/spinach. Spread more mayo on the top half of the croissant and place it on top.
  6. Serve immediately while warm, paired with fresh fruit or coffee.
