- 1 pound cheese tortellini (fresh or frozen)
- 4 cups vegetable or chicken broth
- 1 can (15 oz) diced tomatoes, undrained
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese (for serving)
- Fresh basil leaves (optional, for garnish)
Instructions
- Wash and chop the carrots, celery, and onion. Mince the garlic.
- In your crockpot, add the broth, diced tomatoes (with juice), carrots, celery, onion, garlic, Italian seasoning, salt, and pepper. Stir well to combine.
- Cover the crockpot and set it to cook on low for 4-6 hours or on high for 2-3 hours.
- About 30 minutes before serving, add the tortellini to the soup. Stir gently to combine.
- Just before serving, stir in the fresh spinach, allowing it to wilt in the heat of the soup.
- Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil if desired.
