Ingredients

  • 1 pound cheese tortellini (fresh or frozen)
  • 4 cups vegetable or chicken broth
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese (for serving)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Wash and chop the carrots, celery, and onion. Mince the garlic.
  2. In your crockpot, add the broth, diced tomatoes (with juice), carrots, celery, onion, garlic, Italian seasoning, salt, and pepper. Stir well to combine.
  3. Cover the crockpot and set it to cook on low for 4-6 hours or on high for 2-3 hours.
  4. About 30 minutes before serving, add the tortellini to the soup. Stir gently to combine.
  5. Just before serving, stir in the fresh spinach, allowing it to wilt in the heat of the soup.
  6. Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil if desired.
