- 4 large King Edward Potatoes (or substitute with Maris Piper, Yukon Gold, or Russet)
- to taste tbsp Salt Flakes
- 4 tbsp Vegetable Oil (or goose fat for added flavor)
- 1 tsp Bicarbonate of Soda
- 2 cloves Garlic Cloves (optional)
- 1 sprig Rosemary (optional)
Instructions
- Preheat the oven to 200°C / Fan 180°C / Gas Mark 6.
- Prepare the potatoes by peeling and cutting them to your desired size.
- Boil a pot of salted water, adding bicarbonate of soda, then gently introduce the potatoes for 5-7 minutes.
- Heat a baking tin with vegetable oil (and optional garlic/rosemary) inside the oven for 10-15 minutes.
- Drain the potatoes, then shake them in a colander to roughen the edges.
- Carefully add the potatoes to the hot oil, ensuring they are well-coated.
- Roast for 20 minutes, then turn the potatoes and roast for an additional 20-25 minutes until golden brown.
- Serve immediately, sprinkled with salt.
