- 1 cup all-purpose flour

- 1 teaspoon salt

- 1/4 cup buttermilk
- 1 large egg

Instructions
- Finely chop the onion.
- In a large mixing bowl, combine the flour, baking powder, salt, and pepper. In a separate bowl, beat together the buttermilk and egg, then mix into dry ingredients.
- Fold in the chopped onions.
- Heat about 1/2 inch of oil in a large skillet over medium heat.
- Scoop spoonfuls of the onion batter into the hot oil, flatten slightly, and fry for 2-3 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate to drain excess oil and serve hot.
Notes
Keep an eye on the oil temperature; perfect is around 350°F. Add a pinch of cayenne pepper for extra spice. Store leftovers in an airtight container in the fridge.
