- 4 chicken breasts
- 2 cups fresh spinach
- 4 oz cream cheese softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375 degrees F.
- Sauté garlic in olive oil, then add spinach and cook until wilted.
- Mix spinach with cream cheese, mozzarella, parmesan, lemon juice, salt, and pepper.
- Cut a pocket into each chicken breast.
- Stuff each breast with the spinach cheese mixture.
- Place chicken in a baking dish and drizzle with olive oil.
- Sprinkle with Italian seasoning.
- Bake for 30 to 35 minutes, until chicken is cooked through.
- Rest briefly before serving.
