Ingredients

  • 1 pound Italian sausage (sweet or spicy, based on preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (9 ounces) cheese tortellini
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon as it cooks.
  2. Once the sausage is browned, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Pour in the chicken broth and add the undrained diced tomatoes. Stir to combine.
  4. Increase the heat and bring the mixture to a boil.
  5. Once boiling, add the cheese tortellini to the pot. Cook according to the package instructions, usually about 3-5 minutes, until they are tender.
  6. Add the fresh spinach and stir until wilted, about 1-2 minutes.
  7. Lower the heat and stir in the heavy cream. Allow it to heat through, but do not boil.
  8. Add Italian seasoning, salt, and pepper to taste. Stir to combine.
  9. Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley if desired.
