- 1 pound Italian sausage (sweet or spicy, based on preference)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 package (9 ounces) cheese tortellini
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon as it cooks.
- Once the sausage is browned, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
- Pour in the chicken broth and add the undrained diced tomatoes. Stir to combine.
- Increase the heat and bring the mixture to a boil.
- Once boiling, add the cheese tortellini to the pot. Cook according to the package instructions, usually about 3-5 minutes, until they are tender.
- Add the fresh spinach and stir until wilted, about 1-2 minutes.
- Lower the heat and stir in the heavy cream. Allow it to heat through, but do not boil.
- Add Italian seasoning, salt, and pepper to taste. Stir to combine.
- Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley if desired.
