Ingredients

  • 1 lb sausage (Italian or your choice)
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, sliced
  • 1 celery stalk, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
  2. In the same pot, add chopped onion, minced garlic, carrots, and celery. Sauté until tender.
  3. Add the diced potatoes and chicken broth to the pot, bringing it to a boil.
  4. Reduce heat, cover the pot, and let it simmer until the potatoes are tender, about 15 minutes.
  5. Return the cooked sausage to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes
