Description

A cozy and comforting fall dish featuring tender gnocchi enveloped in a rich, velvety pumpkin sauce with wilted spinach. This easy recipe is perfect for a weeknight dinner or a special gathering, offering a delightful taste of autumn’s harvest.

Ingredients

Scale
  • 1 pound Gnocchi store-bought or homemade
  • 1 cup Pumpkin Puree canned (not pie filling)
  • 1 cup Heavy Cream
  • 3 cloves Garlic minced
  • 1 medium Onion diced
  • 1 cup Parmesan Cheese freshly grated, plus extra for serving
  • 1/4 teaspoon Nutmeg freshly grated
  • Salt and Pepper to taste
  • Red Pepper Flakes optional, for heat
  • 3 cups Spinach fresh, roughly chopped
  • 2 tablespoons Olive Oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, approximately 2-3 minutes. Drain and reserve 1/2 cup of the pasta water for later.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until it turns translucent. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the pumpkin puree and heavy cream. Stir until combined and let it simmer for about 5 minutes. Season with freshly grated nutmeg, salt, and pepper.
  4. Gently mix in the chopped spinach and let it wilt for 2-3 minutes. Fold in the cooked gnocchi delicately, adding reserved pasta water as needed to adjust the sauce’s consistency.
  5. Spoon the creamy pumpkin gnocchi into bowls and finish with a sprinkle of extra Parmesan cheese and red pepper flakes if desired.

Notes

  • Choose quality gnocchi for the best texture and flavor.
  • Adjust sauce consistency with reserved pasta water as needed.
  • For a vegan option, substitute heavy cream with full-fat coconut milk and use nutritional yeast instead of Parmesan cheese.
  • You can add cooked chicken, sausage, or chickpeas for extra protein.
  • Roasted Brussels sprouts or a simple arugula salad make great side dishes.
