- 1 pound Italian sausage (mild or spicy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup kale or spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese, for serving (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Add the diced onion, minced garlic, sliced carrots, and diced celery to the pot. Sauté for about 5 minutes until the vegetables start to soften.
- Add the chicken broth to the pot and bring it to a simmer. Scrape up any browned bits from the bottom of the pot for added flavor.
- Stir in the dried oregano, dried basil, and crushed red pepper flakes if using. Season with salt and pepper to taste.
- Add the chopped kale or spinach to the pot and simmer for another 5 minutes until the greens are wilted.
- Lower the heat and stir in the heavy cream. Allow the soup to heat through, ensuring it doesn’t boil.
- Taste the soup and adjust seasoning if needed.
- Ladle the soup into bowls and top with grated Parmesan cheese and chopped parsley for added flavor and presentation.

- This soup can be stored in the refrigerator for up to 3 days.
- For a thicker soup, reduce the amount of broth.
- You can add other vegetables like bell peppers or zucchini.
