Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup kale or spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese, for serving (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add the diced onion, minced garlic, sliced carrots, and diced celery to the pot. Sauté for about 5 minutes until the vegetables start to soften.
  3. Add the chicken broth to the pot and bring it to a simmer. Scrape up any browned bits from the bottom of the pot for added flavor.
  4. Stir in the dried oregano, dried basil, and crushed red pepper flakes if using. Season with salt and pepper to taste.
  5. Add the chopped kale or spinach to the pot and simmer for another 5 minutes until the greens are wilted.
  6. Lower the heat and stir in the heavy cream. Allow the soup to heat through, ensuring it doesn’t boil.
  7. Taste the soup and adjust seasoning if needed.
  8. Ladle the soup into bowls and top with grated Parmesan cheese and chopped parsley for added flavor and presentation.

  • This soup can be stored in the refrigerator for up to 3 days.
  • For a thicker soup, reduce the amount of broth.
