Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
- Add the potatoes and green beans, stirring for a few minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
- Blend the soup until smooth using an immersion blender.
- Stir in the heavy cream, season with salt and pepper, and heat through.
