Description

Ingredients

  • 2 cups green beans, trimmed and cut into pieces
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  2. Add the potatoes and green beans, stirring for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
  4. Blend the soup until smooth using an immersion blender.
  5. Stir in the heavy cream, season with salt and pepper, and heat through.

Notes
