Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 45 garlic cloves, minced
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 3 cups vegetable broth (low-sodium preferred)
  • 1/2 teaspoon sea salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • Juice of 1 lemon
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft, 4–5 minutes. Stir in garlic and cook for another 1–2 minutes.
  2. Add chickpeas, cumin, salt, and pepper. Stir well to combine and coat evenly.
  3. Pour in vegetable broth and bring to a gentle simmer for 10–12 minutes to allow flavors to blend.
  4. Use an immersion blender to blend until creamy but slightly chunky. Alternatively, blend half the soup in a blender and return to the pot.
  5. Stir in lemon juice and adjust seasoning to taste.
  6. Ladle into bowls and garnish with fresh parsley, cracked pepper, or a drizzle of olive oil.
