- 2 tablespoons olive oil
- 1 small yellow onion, chopped
- 4–5 garlic cloves, minced
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 3 cups vegetable broth (low-sodium preferred)
- 1/2 teaspoon sea salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- Juice of 1 lemon
- Fresh parsley or thyme for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until soft, 4–5 minutes. Stir in garlic and cook for another 1–2 minutes.
- Add chickpeas, cumin, salt, and pepper. Stir well to combine and coat evenly.
- Pour in vegetable broth and bring to a gentle simmer for 10–12 minutes to allow flavors to blend.
- Use an immersion blender to blend until creamy but slightly chunky. Alternatively, blend half the soup in a blender and return to the pot.
- Stir in lemon juice and adjust seasoning to taste.
- Ladle into bowls and garnish with fresh parsley, cracked pepper, or a drizzle of olive oil.
Notes
- This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days.
