- 1/2 teaspoon Nutmeg (freshly grated is best)
- 1 tablespoon Butter (fully melted for smoothness)
- 2 tablespoons Dark Rum (optional, or more vanilla extract)
- 1 tablespoon Powdered Pectin (for jam-like consistency, optional)
Instructions
- In a medium saucepan, combine rich eggnog and cornstarch, whisking until smooth over medium heat. Stir for about 5 minutes until it thickens.
- Gradually stir in sugar, cinnamon, and nutmeg into the warm mixture. Cook on medium heat, whisking for 5-7 minutes until thick.
- Lower heat and mix in melted butter, vanilla extract, and dark rum, cooking for 1-2 minutes until flavors meld.
- For a firmer consistency, whisk in powdered pectin while simmering on low for another 1-2 minutes.
- Remove from heat and cool for 5-10 minutes. Pour into jars, seal tightly, and refrigerate for up to two weeks.
