Description

Ingredients

  • 2 cups Dry Shells or Elbow Macaroni
  • 1 cup Cottage Cheese (Whole milk cottage cheese preferred)
  • 1 cup Sharp Cheddar Cheese (Shredded)
  • 1/2 cup Milk (Any type of milk)
  • 1 teaspoon Kosher Salt (Adjust to taste)
  • 1/2 teaspoon Garlic Powder (Consider fresh garlic for bolder flavor)

Instructions

  1. In a large pot, bring salted water to a boil, then add your dry shells or elbow macaroni. Cook until al dente, about 8-10 minutes. Reserve ½ cup of the cooking water before draining!
  2. Once drained, add the pasta back into the pot.
  3. Lower the heat and add the cottage cheese, sharp cheddar, milk, and garlic powder to the pasta. Stir gently until the cheese is melted.
  4. Gradually pour in the reserved pasta water, mixing until you achieve a smooth, creamy sauce.
  5. Sprinkle in kosher salt and any additional spices. Stir well, and serve immediately.
