Creamy Cottage Cheese Mac and Cheese is a satisfying weeknight dinner kids love.

- 2 cups Dry Shells or Elbow Macaroni
- 1 cup Cottage Cheese (Whole milk cottage cheese preferred)
- 1 cup Sharp Cheddar Cheese (Shredded)
- 1/2 cup Milk (Any type of milk)
- 1 teaspoon Kosher Salt (Adjust to taste)
- 1/2 teaspoon Garlic Powder (Consider fresh garlic for bolder flavor)
Instructions
- In a large pot, bring salted water to a boil, then add your dry shells or elbow macaroni. Cook until al dente, about 8-10 minutes. Reserve ½ cup of the cooking water before draining!
- Once drained, add the pasta back into the pot.
- Lower the heat and add the cottage cheese, sharp cheddar, milk, and garlic powder to the pasta. Stir gently until the cheese is melted.
- Gradually pour in the reserved pasta water, mixing until you achieve a smooth, creamy sauce.
- Sprinkle in kosher salt and any additional spices. Stir well, and serve immediately.
