Ingredients

  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley or chives (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and cauliflower florets; cook for an additional 3-4 minutes until cauliflower softens slightly.
  3. Pour in vegetable broth to cover the vegetables completely. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
  4. Blend the soup until smooth using an immersion blender or by transferring it to a blender. Adjust consistency with more broth if needed.
