- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1/2 cup heavy cream or coconut milk
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley or chives (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
- Add minced garlic and cauliflower florets; cook for an additional 3-4 minutes until cauliflower softens slightly.
- Pour in vegetable broth to cover the vegetables completely. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
- Blend the soup until smooth using an immersion blender or by transferring it to a blender. Adjust consistency with more broth if needed.
- Stir in cream or coconut milk and warm through without boiling. Season with salt and pepper.
