Description

A delightful dish featuring juicy chicken breasts stuffed with melted brie and tart cranberries, perfect for impressing family and friends.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz brie cheese
  • 1 cup fresh cranberries
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Salt and black pepper to taste
  • 1/2 cup panko breadcrumbs
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add cranberries and cook for about 5 minutes until softened. Stir in honey, cinnamon, ginger, salt, and pepper, and cook for an additional 3-4 minutes until thickened, then set aside to cool.
  2. Cut a pocket in each chicken breast and stuff with brie cheese and cooled cranberry mixture. Secure with toothpicks.
  3. Preheat oven to 375°F (190°C) and heat a skillet over medium-high heat. Sear chicken for 2-3 minutes on each side until golden brown.
  4. Mix panko breadcrumbs with melted butter and sprinkle over chicken. Transfer to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  5. Remove from the oven and let rest for 5 minutes. Sprinkle with parsley before serving.

Notes

You can replace brie with other cheeses like gouda or goat cheese for different flavors. Feel free to add nuts or seasonal vegetables to the stuffing.
