Description

Ingredients

  • 4 boneless chicken breasts
  • 4 oz brie cheese, sliced thinly
  • 1 cup cranberry sauce
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 2 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Using a sharp knife, cut a pocket into each chicken breast without slicing all the way through.
  3. Stuff each chicken breast with slices of brie cheese and a heaping tablespoon of cranberry sauce. Secure openings with toothpicks.
  4. Season the chicken breasts with salt, pepper, and chopped rosemary.
  5. Heat olive oil in a large skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden.
  6. Transfer chicken to the prepared baking dish, top with minced garlic, and bake for 25 minutes or until the chicken is cooked through. Remove toothpicks before serving.

Notes

For best results, let chicken rest for 5-10 minutes before slicing to redistribute juices.
