- 4 boneless chicken breasts
- 4 oz brie cheese, sliced thinly
- 1 cup cranberry sauce
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 2 garlic cloves, minced
- Salt, to taste
- Pepper, to taste
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Using a sharp knife, cut a pocket into each chicken breast without slicing all the way through.
- Stuff each chicken breast with slices of brie cheese and a heaping tablespoon of cranberry sauce. Secure openings with toothpicks.
- Season the chicken breasts with salt, pepper, and chopped rosemary.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden.
- Transfer chicken to the prepared baking dish, top with minced garlic, and bake for 25 minutes or until the chicken is cooked through. Remove toothpicks before serving.
