Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and carrots; sauté until soft, about 5 minutes.

- Add rinsed red lentils and vegetable broth; bring to a boil. Reduce heat and simmer uncovered for 20–25 minutes until lentils are tender.
