Ingredients

- 3–4 medium Russet Potatoes, sliced
- 2 large Yellow Onions, thinly sliced
- 2 cups Beef Broth (or Veggie Broth for vegetarian)
- 1.5 cups shredded Swiss cheese (or Gruyère, or mozzarella)
- 2 tablespoons Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil and add the sliced onions. Cook until caramelized.
- Peel and slice the potatoes, layering them in a baking dish as you go. Season with salt and pepper.
- Spread the caramelized onions over the potatoes.
- Pour the broth over the potatoes and onions.
- Top with shredded cheese.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- If desired, broil for 2 minutes to get a golden top.
Notes
Use parchment paper to avoid sticking. Leftovers are even better the next day!
