Description

Quick and delicious cornmeal muffins that are fluffy, slightly sweet, and perfect for breakfast or brunch.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1 large egg
  • 1/2 cup honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together buttermilk, melted butter, egg, and honey until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Grease your muffin tin and fill each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool for 5 minutes in the tin, then transfer to a cooling rack.
