- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup melted butter
- 1 large egg
- 1/2 cup honey (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together buttermilk, melted butter, egg, and honey until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Grease your muffin tin and fill each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let the muffins cool for 5 minutes in the tin, then transfer to a cooling rack.
