Freshly baked Copycat Subway Italian Herb & Cheese Bread is easy to make from scratch and perfect for sandwiches or enjoying on its own.

- 3 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 tablespoon Italian seasoning
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 cup warm water (about 110°F/45°C)
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon Italian seasoning (for topping)
- 1 tablespoon olive oil (for brushing)
Instructions
- Prepare the yeast mixture: Combine warm water, sugar, and active dry yeast in a small bowl. Stir gently and let sit until frothy.
- Mix the dry ingredients: In a large bowl, whisk together flour, salt, and Italian seasoning.
- Combine wet and dry ingredients: Add yeast mixture and olive oil to dry ingredients and mix until a dough forms.
- Let the dough rise: Place dough in oiled bowl, cover, and let rise until doubled in size (about 1 hour).
- Shape the dough: Punch down and shape into a rectangle on a floured surface.
- Add the cheese and herbs: Brush dough with olive oil and sprinkle with mozzarella, Parmesan, and additional Italian seasoning.
- Let the dough rise again: Cover and let rise for another 30 minutes.
- Bake the bread: Preheat oven to 375°F (190°C) and bake for 25-30 minutes.
- Cool and serve: Allow the bread to cool on a wire rack for at least 15 minutes before slicing.
Notes
Store leftover bread wrapped in plastic wrap to keep fresh for up to three days.
