Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon instant coffee granules
  • 1/4 cup heavy cream
  • 1/2 cup unsweetened coffee
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a clean bowl, whip the egg whites until soft peaks form.
  3. Gradually add granulated sugar, continuing to whip until stiff peaks form.
  4. Sift together almond flour, powdered sugar, and instant coffee granules.
  5. Fold the dry ingredients into the egg whites gently until combined.
  6. Pipe small circles onto a baking sheet lined with parchment paper.
  7. Let the piped macarons sit for 30 minutes to form a skin.
  8. Bake for 15-20 minutes until firm.
  9. Let cool completely before removing from the baking sheet.
  10. For the filling, whip the heavy cream until peaks form, then fold in the coffee and butter.
  11. Spread or pipe the filling between two macaron shells.
