Ingredients

- 4 eggs
- 150g of sugar
- 150g of flour
- 1 teaspoon of baking powder
- 2 tablespoons of instant coffee dissolved in 2 tablespoons of hot water
- 200ml of heavy cream (for whipping)
- 2 tablespoons of instant coffee (for frosting)
- 2 tablespoons of sugar (for frosting)
Instructions
- Preheat the oven to 180°C (350°F) and grease your cake pan.
- In a large bowl, beat the eggs and sugar together until fluffy and doubled in volume (about 5-7 minutes).
- Mix the hot water coffee solution into the egg and sugar mixture until well combined.
- Sift the flour and baking powder into the bowl and gently fold in.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Beat the heavy cream, instant coffee, and sugar in a separate bowl until firm and creamy.
- Once the cake is cool, slice it in half horizontally and spread half of the coffee cream over one layer.
- Place the other layer on top and frost the top and sides with the remaining coffee cream.
- Refrigerate the cake for at least one hour before serving.
- Slice and enjoy with your favorite beverage.

For best results, use room temperature ingredients and high-quality instant coffee.
