- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 2 cups sweetened shredded coconut
- 1 cup toffee bits
- ½ cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the shredded coconut and toffee bits (and nuts if using) until evenly distributed.
- Spread the mixture evenly in the prepared baking pan.
- Place in the preheated oven and bake for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool in the pan for about 20 minutes before cutting into squares.
