Description

A comforting and delicious dessert combining sweet-tart rhubarb topped with a crumbly oat and brown sugar topping.


Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine chopped rhubarb, sugar, flour, and lemon juice. Pour into a greased baking dish.
  3. In another bowl, mix oats, flour, brown sugar, and cinnamon. Stir in melted butter until crumbly.
  4. Sprinkle the oat mixture over the rhubarb.
  5. Bake for 35-40 minutes, or until the top is golden and the rhubarb is bubbling.
  6. Serve warm, optionally with vanilla ice cream.

Notes

For an extra-crispy topping, let the oat mixture sit for a few minutes before baking. You can also customize by adding berries or nuts.
