- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine chopped rhubarb, sugar, flour, and lemon juice. Pour into a greased baking dish.
- In another bowl, mix oats, flour, brown sugar, and cinnamon. Stir in melted butter until crumbly.
- Sprinkle the oat mixture over the rhubarb.
- Bake for 35-40 minutes, or until the top is golden and the rhubarb is bubbling.
- Serve warm, optionally with vanilla ice cream.
Notes
For an extra-crispy topping, let the oat mixture sit for a few minutes before baking. You can also customize by adding berries or nuts.
