- 1 ½ cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup unsweetened applesauce
- ½ cup vegetable oil
- 2 large eggs
- 2 cups peeled and diced apples
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well combined.
- In a separate bowl, whisk together the applesauce, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the diced apples.
- Pour the batter into a greased 9×13 inch baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cake to cool a bit before slicing and serving. Enjoy warm or at room temperature.
Notes
Use a mix of tart and sweet apples for best flavor. You can also add nuts or raisins for extra texture.
