Church Window Cookies are a delightful no-bake treat featuring melted chocolate, pastel marshmallows, toasted walnuts, and sweet shredded coconut. These colorful, stained-glass-like cookies are easy to prepare and perfect for holiday cookie trays or any festive occasion.

- 2 cups (12 ounces) semi-sweet or milk chocolate chips
- 1/2 cup salted butter, cubed
- 1 (10-ounce) package pastel marshmallows
- 1/2 cup toasted chopped walnuts
- 1 1/2 cups sweetened shredded coconut, divided
Instructions
- Place chocolate chips and cubed butter in a large saucepan over low heat. Stir constantly until fully melted and smooth. Remove from heat and let cool for about 5 minutes to prevent melting the marshmallows in the next step.
- Lay two large pieces of wax paper on a flat surface. Sprinkle about 1/4 of the shredded coconut onto each piece in a 4 by 12-inch section, saving half the coconut for later.
- In a large bowl, combine the pastel marshmallows and toasted chopped walnuts. Pour the cooled chocolate mixture over and stir gently to coat all ingredients evenly without melting the marshmallows.
- Divide the mixture in half and place each portion onto the coconut-covered sections on the wax paper. Shape each into a log approximately 4 by 12 inches. Sprinkle the remaining coconut over the tops and any exposed areas of the logs.
- Tightly wrap each log in the wax paper. Refrigerate for at least 2 hours or overnight to allow the cookies to firm up.
- Once chilled and firm, use a sharp knife to cut the logs into 1/2-inch slices. Serve chilled or at room temperature.
