Description

  • 2 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic, minced
  • Fresh basil leaves
  • Salt and pepper, to taste
  • Fresh mozzarella (optional, for extra creaminess)
  • 1 loaf of baguette or crusty bread, sliced into thick pieces
  • Olive oil for brushing the bread

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the bread into thick slices and arrange them on a baking sheet. Brush each slice with olive oil, then toast in the oven for 10-12 minutes or until golden and crispy. Set aside to cool slightly.
  2. In a bowl, combine the cherry tomatoes, garlic, balsamic vinegar, olive oil, salt, and pepper. Toss to combine. If using mozzarella, tear it into small pieces and add it to the mixture.
  3. Arrange the toasted bread slices in a circle on a platter, leaving a gap in the middle. Spoon the tomato mixture onto each piece of bread. Garnish with fresh basil leaves around the edges of the wreath.
  4. Serve the wreath immediately as an appetizer, perfect for holiday gatherings or sharing platters.
