- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 clove garlic, minced
- Fresh basil leaves
- Salt and pepper, to taste
- Fresh mozzarella (optional, for extra creaminess)
- 1 loaf of baguette or crusty bread, sliced into thick pieces
- Olive oil for brushing the bread
Instructions
- Preheat your oven to 375°F (190°C). Slice the bread into thick slices and arrange them on a baking sheet. Brush each slice with olive oil, then toast in the oven for 10-12 minutes or until golden and crispy. Set aside to cool slightly.
- In a bowl, combine the cherry tomatoes, garlic, balsamic vinegar, olive oil, salt, and pepper. Toss to combine. If using mozzarella, tear it into small pieces and add it to the mixture.
- Arrange the toasted bread slices in a circle on a platter, leaving a gap in the middle. Spoon the tomato mixture onto each piece of bread. Garnish with fresh basil leaves around the edges of the wreath.
