Description

A delightful traybake combining traditional flavors of dried fruits and spices, perfect for the holiday season.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 cup rum or orange juice
  • 1/4 cup apricot jam
  • Marzipan for covering (optional)
  • Fondant for decorating (optional)
  • Edible decorations for garnish

Instructions

  1. Soak mixed dried fruits in rum or orange juice for at least 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. In a mixing bowl, cream together the butter and sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Incorporate the soaked fruits and dry ingredients into the mixture.
  6. Pour the batter into a prepared baking tray and bake for 45-50 minutes or until a toothpick comes out clean.
  7. Once cooled, brush with apricot jam for moisture and shine.
  8. Cover with marzipan and then fondant if desired.
  9. Decorate with edible items as preferred.
  10. Slice into squares and serve warm or at room temperature.
