Ingredients

- 2 cups mixed dried fruits
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1/4 cup rum or orange juice
- 1/4 cup apricot jam
- Marzipan for covering (optional)
- Fondant for decorating (optional)
- Edible decorations for garnish
Instructions
- Soak mixed dried fruits in rum or orange juice for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Incorporate the soaked fruits and dry ingredients into the mixture.
- Pour the batter into a prepared baking tray and bake for 45-50 minutes or until a toothpick comes out clean.
- Once cooled, brush with apricot jam for moisture and shine.
- Cover with marzipan and then fondant if desired.
- Decorate with edible items as preferred.
- Slice into squares and serve warm or at room temperature.
Notes
This cake can be customized with additional nuts, different dried fruits, or flavored extracts.
