Ingredients

  • 1 tbsp Brown Sugar
  • 1 tbsp Coarse Black Pepper
  • 1 tbsp Sea Salt or Kosher Salt
  • 3 lb Eye of Round Beef Roast
  • 2 tbsp Avocado Oil or Olive Oil
  • 2 tbsp Unsalted Butter
  • 1 tbsp Red Wine Vinegar
  • 1 cup Beef Broth
  • 1 tbsp Soy Sauce or Liquid Aminos
  • 1/2 White Onion, finely chopped

Instructions

  1. In a bowl, mix together brown sugar, coarse black pepper, and sea salt. Generously apply this mixture to the roast, allowing it to sit at room temperature for 30 minutes to enhance the flavors.
  2. Set your oven to 500°F (260°C).
  3. In a skillet, heat the avocado oil over medium-high heat. Sear the beef roast on all sides for 2 minutes each.
  4. Place the roast in the preheated oven and immediately turn off the oven. Allow it to cook until it reaches 125°F (about 1 hour).
  5. Once cooked, remove the roast from the oven. Let it rest uncovered for 20-45 minutes.
  6. In the same skillet, sauté the finely chopped onions until softened. Add in the unsalted butter, red wine vinegar, beef broth, and soy sauce. Simmer for a few minutes, then blend until smooth.
  7. Cut the roast against the grain into ½-inch slices and drizzle the sauce over the slices just before serving.
