- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry pie filling
- 1/2 cup chopped pistachios
- 1/4 cup sour cream
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted unsalted butter, then press into a greased 9×9 inch baking dish to form the crust.
- In another bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Add sour cream to the cream cheese mixture and mix until well-blended.
- Spread the cheesecake mixture evenly over the crust.
- Drop spoonfuls of cherry pie filling over the cheesecake layer and gently swirl with a knife.
- Sprinkle chopped pistachios evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the center is set.
- Cool completely at room temperature, then refrigerate for at least 2 hours.
- Cut into bars, serve with a dollop of whipped cream if desired, and enjoy!
