Description

This Chocolate Sponge Cake is light, airy, and rich in flavor.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs (separated)
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the egg yolks and half of the granulated sugar (1/2 cup) until pale and thick.
  4. Stir in the vegetable oil and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the egg yolk mixture, alternating with the boiling water. Mix until smooth and well combined.
  6. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining granulated sugar (1/2 cup) and continue beating until stiff peaks form.
  7. Gently fold the whipped egg whites into the chocolate batter in three additions, being careful not to deflate the mixture.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer to a wire rack to cool completely.
  11. Once cooled, frost with your favorite chocolate frosting or serve with whipped cream and berries.
  12. Slice and enjoy your chocolate sponge cake!
