Description

A rich and visually stunning tart combining chocolate and pistachios, perfect for any dessert lover.


Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1/3 cup powdered sugar
  • 1 large egg yolk
  • 12 tablespoons cold milk (as needed)
  • Pinch of salt
  • 1/2 cup heavy cream
  • 100g dark chocolate (at least 60%, chopped)
  • 1 teaspoon vanilla extract
  • 1 cup shelled unsalted pistachios (plus extra for garnish)
  • 1/4 cup whole milk
  • 1/2 cup heavy cream
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon almond extract (optional)
  • 1 tablespoon butter

Instructions

  1. Gather all your ingredients.
  2. In a bowl, whisk together flour, cocoa powder, powdered sugar, and salt. Add butter and blend until crumbly. Mix in egg yolk and cold milk until dough forms. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough, press into tart pan, and bake for 25 minutes.
  4. Heat heavy cream for the bottom ganache until simmering. Pour over dark chocolate and mix in vanilla and salt. Chill in tart shell for 30 minutes.
  5. Blend pistachios and milk until smooth. Heat with cream, sugar, and cornstarch until thickened. Spread over ganache layer and chill for another 30-45 minutes.
  6. For the top ganache, heat cream, pour over chopped chocolate and butter, mix until smooth, and pour over pistachio layer. Chill.
  7. Garnish with extra pistachios and chill for 1 hour before serving.

Notes

For a dairy-free option, substitute heavy cream with coconut cream and butter with vegan butter. Adjust sugar levels for desired sweetness.
