- 4 chicken thighs, skin-on and bone-in
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon sugar
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken thighs skin-side down and cook for 4-5 minutes until golden brown. Flip and cook for another 4-5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chicken broth, diced tomatoes, chili powder, cumin, cinnamon, cocoa powder, sugar, and apple cider vinegar. Mix well and bring to a simmer.
- Nestle the seared chicken thighs back into the skillet, ensuring they are covered with the sauce.
- Reduce the heat to low and cover the skillet. Allow to simmer for 30-40 minutes until the chicken is cooked through and tender.
- Taste the sauce and adjust seasoning with salt, pepper, or additional sugar if needed.
- Once cooked, remove from heat and let rest for a few minutes. Garnish with fresh cilantro.
- Transfer the chicken to a serving platter, spooning extra mole sauce over the top.
