  • 4 chicken thighs, skin-on and bone-in
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon sugar
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken thighs skin-side down and cook for 4-5 minutes until golden brown. Flip and cook for another 4-5 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the chicken broth, diced tomatoes, chili powder, cumin, cinnamon, cocoa powder, sugar, and apple cider vinegar. Mix well and bring to a simmer.
  6. Nestle the seared chicken thighs back into the skillet, ensuring they are covered with the sauce.
  7. Reduce the heat to low and cover the skillet. Allow to simmer for 30-40 minutes until the chicken is cooked through and tender.
  8. Taste the sauce and adjust seasoning with salt, pepper, or additional sugar if needed.
  9. Once cooked, remove from heat and let rest for a few minutes. Garnish with fresh cilantro.
  10. Transfer the chicken to a serving platter, spooning extra mole sauce over the top.
