Ingredients

  • 2 tbsp black cocoa powder
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 3 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder, sifted
  • 2 tsp instant dry yeast
  • 1 tsp fine salt
  • 1 tsp instant espresso or coffee
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tbsp unsalted butter, room temperature
  • 2/3 cup milk or dark chocolate chips
  • 3 tbsp whole milk
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the filling by mixing the brown sugar, black cocoa powder, and cinnamon together in a bowl.
  2. Preheat the oven to 200°F and combine the dry ingredients: flour, cocoa powder, yeast, espresso powder, and salt.
  3. Heat the milk, granulated sugar, and unsalted butter in a saucepan until warm, then add it to the dry ingredients and mix.
  4. Add the egg to the dough mixture and stir until a sticky dough forms, adjusting flour as needed.
  5. Let the dough rest covered for 15 minutes in a warm place.
  6. Roll out the dough, spread the butter, and sprinkle the filling evenly, then roll tightly and slice into 12 pieces.
  7. Let the rolls rise for 30 minutes in a greased baking dish.
  8. Preheat the oven to 350°F and bake for 26-32 minutes until golden brown.
  9. For the glaze, melt the butter and chocolate chips with milk, then mix in powdered sugar and vanilla.
  10. Drizzle the glaze over rolls and serve warm.

Notes

For best results, ensure the milk mixture is warm but not boiling when added to yeast. Store leftovers in an airtight container at room temperature for up to 3 days.
