Description

Chocolate Chip Protein Cookies are a healthy and delicious snack packed with protein.


Ingredients

  • 1 cup almond flour (or whole wheat flour)
  • 1/2 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate flavor)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil (melted) or unsalted butter
  • 1/4 cup honey (or maple syrup)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, rolled oats, protein powder, baking soda, and salt until well combined.
  3. In another bowl, mix the melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the dark chocolate chips.
  5. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.
  6. Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden. The cookies will firm up as they cool.
  7. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

  • For a vegan option, replace the egg with a flax egg.
